VINIFICATION IN AMPHORA

Ancient method

Following the advice of the ancients is always a good idea

We maintain the traditions of our ancestors and  rediscover the ancient use of amphorae, using ancient cultivation methods now in danger of extinction.
We produce our wines without the use of sulfur dioxide with
natural fermentation, in amphorae buried in volcanic lapilli.

The amphoraia

All the grapes produced are transformed into amphorae . Our amphoraia consists of 10 dolia of different capacities, from 320 to 750 litres. Vinification in amphorae is an ancient method , already in use in ancient Rome. 

Compared to wood, the amphora does not release tannins or aromas, but its porosity allows the wine to “breathe”. This “neutrality” allows the raw material, the grape, to express all its characteristics and aromas without counterfeiting , evolving slowly thanks to the slight contact with the external environment due to the porosity of the clay. 

The process

Vinification in amphorae involves destemming the grapes and maceration on the skins. 

All the wines are obtained through spontaneous fermentation with native yeasts, without the addition of sulfur dioxide in any phase of vinification and without any synthetic product, not even those permitted in organic farming. 

And the refinement of the wine also takes place in amphorae, for about four months, with the presence of the skins, and then for another 2-3 months in the bottle before being put on the market .

The result?

Wines with a high polyphenol content, intense color and higher volatile acidity than conventional wines. Spicy, vegetal, rightly tannic and very persistent on the nose.
